Cordero di Montezemolo Elioro Langhe Chardonnay '21

Elioro Chardonnay is a refined white wine that harmoniously balances complexity with fresh elegance. Partially fermented in stainless steel and partially in oak barrels, it achieves the perfect balance between fruitiness and creaminess. In the glass, aromas of ripe peach, citrus, a hint of tropical fruit, and delicate toasted notes emerge. The finish is refined, with a distinctive minerality that reflects Piemonte’s limestone-rich soils.

Elioro Chardonnay pairs beautifully with seafood dishes featuring a light, velvety sauce with a touch of richness. The key is balancing acidity and fat – the wine’s bright acidity cuts through the richness, creating a perfect harmony. At Daalder, we love pairing it with delicate turbot, where the wine’s freshness enhances every bite.

San Vicente Manor '20

San Vicente is an extraordinary wine crafted from a single vineyard with rare, old Tempranillo Peludo vines. It boasts deep concentration, velvety tannins, and complex aromas of ripe red fruit, spices, and subtle oak. Extended aging in oak barrels enhances its elegance and balance, making it an exceptional experience both now and after years of cellaring.

San Vicente is best enjoyed with venison, as served at Daalder, but it also pairs wonderfully with a juicy steak for a cozy night in, or wagyu. Another excellent match is a rich, earthy mushroom risotto, where the depth of flavors perfectly complements the wine’s elegance.
