Domaine Antonin Guyon Pernand Vergelesses 1er Cru Sous Fretille 2023

In the heart of Burgundy, in Savigny-lès-Beaune, lies Domaine Antonin Guyon. The estate was founded in the 1960s by Antonin Guyon, a man with great faith in the power of the terroir of the Côte d’Or. He built the estate with great dedication by carefully purchasing plots across the Côte de Nuits and the Côte de Beaune. Today, the family owns approximately 47 hectares of vineyards, spread across more than 25 appellations, including prestigious Premiers Crus and Grands Crus.

The sommelier's tip

Beautifully suited to refined fish varieties. It can comfortably handle sauces with depth and character—think of a classic Vin Jaune sauce served with turbot or cod. It is equally compelling alongside a beurre blanc or other white wine–based sauces, where its vibrant acidity provides precision and balance, cutting through richness while enhancing the dish’s structure.

Chateau la Tour de l’Évéque Rouge Noir & Oir 2019

A vineyard in the heart of Provence. The Sumeire family, who have owned the Font-Freye estate since 1933, purchased this large estate near Pierrefeu, in the Var region, in 1958. The estate, which formerly served as the summer residence of the Archbishops of Toulon, is nestled among the hills of the Maures. The family of the current owner, Régine Sumeire, restored the estate’s splendor. It bears two historic names that recall its rich past: Château la Tour de l’Évêque and Château la Tour Sainte Anne.

Works perfectly with meat dishes, particularly lamb. It shows especially well alongside grilled preparations, where the subtle smokiness and caramelized notes amplify the wine’s depth and structure.
